Grilled Chicken with Balinese Spices


Ingredients:
1 whole chicken
2 tbsp lime juice
1 tsp salt
5 tbsp oil for frying
6 lime leaves
4 stalk lemongrass, crushed
3 tbsp soy sauce
1 tbsp tamarind water
200 ml water
Spices:
5 pcs red chili
3 pcs red chili sauce
5 pcs red onion
3 cloves garlic
1 tsp shrimp paste, cooked
2 cm turmeric
1 cm greater galingale (kencur)
4 items hazelnut, toasted
1 tsp lemon juice
1 tsp salt
1 tsp sugar

1. Marinate chicken pieces with lime juice and salt. Take a few moments.
2. Stir fry ground ingredients until fragrant. Add lemongrass and lime leaves and stir until wilted.
3. Enter the chicken pieces, stirring until chicken changes color.
4. Add water, tamarind water, cover pan, and reduce the heat. Cook until chicken 3 / 4 cooked. Remove the chicken.
5. Bake the chicken while occasionally reversed until chicken is cooked. Basting with marinade occasionally.
6. Remove the chicken and serve.
